The best tortilla de patata for me is unquestionably located in Calle Colon 13 in Malasaña, Madrid. The bar is called, Bodega de la Ardosa. I know a lot of people are going to disagree with me because the search for the best tortilla is always a topic of conversation in Spain. Before I get called basic, and get hate for my preferred choice- hear me out and read all the way to the end to find other recommended locations.

The Bodega de la Ardor has been around since 1892 and it is an iconic tapas bar that you must visit when you are in Madrid. The tortilla de patata is a classic item to order at this bar along with their house vermouth on tap. If vermouth is not your drink of choice a tall glass of red wine is always the next best thing to ask for.

Now, let me describe to you why this tortilla outranks any fancy, try-hard tortillas de patatas out there. The tortilla itself is simple, it is made with four basic ingredients and that is: eggs, potatoes, onion, and salt. It does not need any mixed chorizo, cheese, or mushrooms to be considered good. It is perfect as is.

The tortilla is so fluffy on the outside as it is inside. Although I can understand that most people prefer a liquidy tortilla; I on the other hand much rather have my eggs to be slightly runny but still creamy. Which is why I prefer coming to the Bodega de la Ardosa, they have mastered the mix between a golden yellow exterior and a creamy egg and potato interior.

It is simple, classy, and perfect (for me).

Next time you are in Madrid, give the Bodega de la Ardosa a try and order a pincho de tortilla and side of alcachofas (artichokes) or embutidos. The prices are very affordable and completely worth visiting for its authentic Spanish tapas.
